Wild Canadian Chaga Mushroom
Rich in Beta-Glucans with anti-cancer properties, Chaga Mushrooms (Inonotus obliquus) have been harvested, boiled, and consumed for centuries throughout Northern Europe and Russia. Chaga grows wild in the Canadian north on Yellow and White Birch trees, often taking years to fully mature into what looks like protruding charcoal chunks. How to consume:
Bring to a boil 1L of water. Let cool to approximately 70C. Add in 1-2 Chaga chunks (40g) and let boil for 20min. This will give you a refreshing decoction. Alternatively, brew the Chaga for 8hours to create a rich and potent tonic. Expect the water to become dark, similar to black coffee. Next, strain the liquor into a cup or re-sealable glass and enjoy. You can store the Chaga decoction for several days in a refrigerator or freeze any excess in ice-cube trays for later consumption. You can also reuse each chunk several times, simply re-brew it until the water no longer becomes dark.

In laboratory studies chaga has been shown to demonstrate anti-cancer activity as well as anti-inflammatory, antiviral, and immune-stimulating properties, according to the Memorial Sloan-Kettering Cancer Center.
