White Peony 1st Flush contains both young buds (similar to the silver needle) and mature leaves that were harvested during the first harvest of the spring season (the first flush). This makes the brew slightly less sweet and gives it a savory taste. This full bodied tea has floral and fruity notes and a sweetness that are rare in white teas. The higher grades of white peony have a higher ratio of buds to leaves. Our white peony was plucked under very strict standards. Only buds with one leaf are selected. This results in there being a higher ratio of buds to leaves therefore making ours a top grade white peony. White teas go through very minimal processing. The buds and leaves are plucked very early in the harvesting season and then withered or air dried to remove all the moisture.
