Yellow tea (also called Huang Cha) is one of Chinas six categories or types of tea. It is called “yellow” because the yellow leaf and yellow liquor, this unusual characteristic comes from the additional “Menhuang” processing stage during which the leaf is piled, then covered or wrapped and kept damp at temperatures between 77 F and 95 F until it turns yellow.
